This is a great high protein/low calorie chilli recipe that will make 4 sizeable portions for either your meal prep or when cooking for friends and family. Goes very well with sour cream, white rice and a nice glass of red wine.

  • 500g of 5% fat Beef Mince
  • 1 can of Chopped Tomatoes
  • 1 can of Kidney Beans (in water)
  • 1-2 sprigs of Thyme
  • 4 Garlic cloves
  • 2 Bay Leaves
  • 1 bunch of Chives
  • 1 Scotch Bonnet (leave out the seeds if you dont like it too spicy)
  • 2 Bell Peppers (colour is your preference)
  • 1 Onion
  • 1 square of Dark Chocolate
  • 1/2 tsp of Oregano
  • 1 tbsp of Cumin
  • 1 tbsp of Smoked Paprika
  • Pinch of Cinnamon
  • 1 tbsp of Tomato Puree
  • And a generous helping of Worcestershire Suace

Firstly chop and dice the Thyme, Bay Leaves, Chives, Garlic, Onion, Bell Peppers and Scotch Bonnet so that they are ready to be chucked in the pan when you need them. Also get the spices or any herbs that are pre-prepared in containers like Oregano out and ready to go in.

Put the mince and onions in a hot pan/wok and place onto a hob

Break up the mince and turn over until all brown

Drain the water out of the Kidney Beans and add the whole can to the mince along with the whole can of Chopped Tomatoes

Stir in and add all of the herbs, dark chocolate and spices you prepared earlier

Add 1 tbsp of Tomato Puree, lots of Worcestershire Sauce and season with salt to taste

Now you can leave the chilli to cook on low heat for up to an hour whilst stiring regularly, or you can do a similar process but in a slow cooker if you're that way inclined

This chilli will make 4 decent sized portions, you can separate it into 4 plastic containers as meal prep and consume over the week or feed friends and family there and then.

Bon Appetite!
